Garlicky Cashew Rotini

Garlicky cashew rotini has to be one of my favorite pasta dishes. It’s creamy and... of course, garlicky 🤤🧄. Who doesn’t love garlic? 😂 This pasta is packed with all kinds of nutritional deliciousness especially from the nutritional yeast. Nutritional yeast is an excellent source of vitamins, minerals, as well as nutrients. Although it tends to provide a nutty, cheesy flavor to certain meals it also has a high nutritional value. I also added in green lentil pasta to make this a perfect pasta dish. The best part, there’s only 7 ingredients and takes less than 20 minutes to make 🤯.

Ingredients:

Baking and Spices

  • 1 Tbsp nutritional yeast

  • 1 tsp garlic powder

  • 1/2 tsp salt

  • 1/4 tsp ground black pepper

Other

  • 1 cup (112g) cashews

  • 1 1/4 cup nondairy milk

  • 8oz Rotini pasta (I used green lentil pasta from Torrent)

Directions:

  1. Heat a large pot of water and boil pasta according to directions, drain and place back into pot.

  2. Place all ingredients except the pasta into a high speed blender and blend until smooth and creamy.

  3. Pour sauce over pasta and mix well. Serve immediately.
