Rainbow Breakfast Bowl
Who says Monday’s can’t be all sunshine and rainbows ☀️🌈? I love adding in color to brighten up my Monday’s and this breakfast rainbow bowl is no different 🤤. This bowl is jam packed with all kinds of flavor and nutritious elements that it’s hard to pass up. The real surprise is the sweet potatoes though. I normally don’t have a warm veggie paired with cool fruits, but in this case it just... works 😃🙌. This is where eating the rainbow is taken to a whole new level 🤯🤤. This bowl offers more nutritional benefits than you would think. From the berries with their high antioxidants and anti cancer capabilities, fiber, vitamins, minerals, sugars to the sweet potatoes rich in potassium and fiber, this bowl is not messing around. Top this bowl with toasted oats and you add an additional bonus with its B vitamins and minerals including iron, magnesium, manganese, and zinc. Oats contains compounds that act as antioxidants that can reduce chronic inflammation. All of these together provide a reduced risk of heart disease, type 2 diabetes, obesity, and stroke. Seems like there’s more than just sunshine and rainbows offered in this bowl 😃.

Ingredients:
Produce
2 Medium sweet potatoes, halved (lengthwise)
1 Ripe banana, peeled and sliced
1/2 cup fresh blueberries
1/2 cup fresh strawberries
Baking and Spices
1tsp ground cinnamon
Other
1/4 cup Pumpkin seeds (pepitas)
2 Tbsp pure maple syrup (optional)
Toasted oats or granola
Directions:
Place sweet potato halves in a steamer basket in a large saucepan. Add water to saucepan to just below basket. Bring to boil, steam, covered for 20 minutes or until tender.
When potatoes are done cooking, place into a large bowl and mash. Stir in cinnamon and maple syrup (optional). Split mixture into 2 serving bowls.
Top with banana, berries, pumpkin seeds, or even toasted oats/granola. Enjoy.
